Two different cameras

The Insta360 X5 captures a 360-degree sphere, which is why its top frame rate at 4K only applies to 360 footage; single-lens 4K tops out at 60fps. That sphere is the whole point: you pick the angle later in the app, so you never miss a shot by aiming wrong.

The DJI Osmo Action 6 is a conventional single-lens camera. You frame what you shoot. In exchange you get more of the standard action-cam toolkit, including 240fps slow motion and time-lapse plus hyperlapse, both of which the X5 lacks in the same form.
